Grace’s
            Greek Rice Pudding
 
1/2 cup rice, preferably short-grain
1 cinnamon stick
2 cups water
2 eggs
6 cups milk
1 1/2 tablespoons cornstarch mixed with 2 tablespoons milk
1 3/4 cups sugar
1 ½ teaspoon vanilla extract
 
Ground cinnamon (for garnish)
Combine rice, cinnamon stick and water in a saucepan and bring to a boil. Lower the heat and simmer covered for 15 minutes.
Beat eggs and add the milk, cornstarch mixture, and sugar to the pan. Increase the heat to moderate and stir constantly until the mixture thickens, about 15 minutes.
Add vanilla extract and stir to combine. Spoon into individual serving bowls or glasses and refrigerate for at least 2 hours. Dust with a little cinnamon before serving.

Step out by Faith
This scene is that of Jonathan and his armorbearer coming to a place where they were facing a garrison of the Philistines:

1 Samuel 14
6   And Jonathan said to the young man that bare his armour, Come, and let us go over unto the garrison of these uncircumcised: it may be that the LORD will work for us: for there is no restraint to the LORD to save by many or by few.
7   And his armourbearer said unto him, Do all that is in thine heart: turn thee; behold, I am with thee according to thy heart.
 
Jonathan seemed to be in a situation of uncertainty. The future, the absolute direction he needed for the present time just was not clear. All he could say in v.6 was "It may be..." He couldn’t be sure one way or the other. He seemed to, and probably did, feel that it was the right thing to do, but there is uncertainty revealed in his words. There seemed to be some doubt.
There are times when you have to step out by faith, and that means that YOU WILL NOT BE SURE. To wait until you’re sure is not moving by faith. All you may have is a "maybe". You may think that we are only to move out on a surety. But do you realize how many natural decisions we make, based on a "maybe"?
Jonathan and his armorbearer were at a place of insufficiency. They had insufficient personnel, insufficient weaponry or equipment, and insufficient plans. They weren’t equipped, or able in the natural to do it. But they also had something else: THEY HAD "MAYBE FAITH." They didn’t have assurance, but they had faith in a "maybe"! And God intervened on their behalf, and wrought a wonderful victory!

Baklava
2 cups honey                               1 t. cinnamon
1 cup sugar                                 14 phyllo (fillo) pastry sheets
1 cup water                                  1 C. butter, melted
1 T. grated orange rind            
2 cups toasted and/or roasted nuts (almonds, pecans,                               
            walnuts, pistachios), chopped fine
 
 One day in advance:
Bring honey, sugar, water, orange rind, and cinnamon to a boil. Continue boiling over low heat for 10 minutes. Remove from heat and save 1 cup for later use.
 

Preheat oven to 350 degrees F.
Grease a shallow baking pan and line with 4 pastry sheets*, brushing each one with butter. Extend sheets over the rims of the pan. Spread 1/2 cup mixed nuts evenly over sheets. Sprinkle them with some of the syrup and melted butter. Cover with 2 sheets, brushing each with butter. Repeat procedure 3 times. Cover the last layer of nuts, syrup and butter with the last 4 sheets   brushing each with butter.

Press the pastry sheets firmly against the rim of pan and trim with a sharp knife if needed. Cut through the top layer of phyllo diagonally to make 24 equal diamond shapes. Bake for 30 minutes, then increase the heat to 400°F and bake an additional 15 minutes or until golden brown.
 
Pour the cooled syrup on top and let cool. Slice all the way through previous cuts to make 24 diamond-shaped bars. Brush the top with the remaining butter.

Keeps 2-3 weeks in a cool dry place.

* Keep phyllo sheets from drying out by placing a damp, clean dishtowel over them until they are ready to use.

MATTHEW 9:21, 22 ...for she said to herself, "If only I may touch His garment, I shall be made well."
But Jesus turned around, and when He saw her He said, “Be of good cheer, daughter; your faith has made you well.” And the woman was made well from that hour.

My Uncle Billy, War Hero

 My Uncle Billy James was a war hero.  Several books covered the bravery of the 394th Regiment's Intelligence and Reconnaissance platoon.*
 
On Dec. 10, his platoon was ordered into the village of Lanzareth, Belgium. A strong German attack was indeed heading their way. Hitler's counteroffensive, launched on Dec. 16, involved almost a half-million men and thousands of tanks and artillery pieces, all aimed at slicing through the Ardennes forest, recapturing Antwerp and leaving the Allied forces in disarray. This was a large push toward the allies who were advancing quickly toward Germany. The fight that was to ensue became known as the Battle of the Budge. It was the turning point of WWII.
 
The enemy's advance just happened to go through the tiny village of Lanzareth. The platoon killed more than five hundred enemy troops. Lt. Bouck (the commanding officer who, by the way, really favored my Uncle Billy) radioed in that they were out of ammunition and they could see that huge columns of Nazis were coming. He was told that they should hold their position. They did.
 
When the Nazis showed up they captured everyone.  Lt. Bouck and Uncle Billy were in a fox hole together. The barrel of a machine gun was thrust in front of them. A Nazis shot off half of Uncle Billy’s face.
 
The platoon was captured and scattered throughout Germany in POW camps. They were badly mistreated and hardly fed. At the end of the war they were the only Platoon that was captured where every member survived.
 
President’s Eisenhower’s son wrote a book called the Bitter Woods about the battle of The Budge and he wrote about them and Uncle Billy. I was given an autographed copy from him.
 
Uncle Billy worked for years to try and get the platoon recognized for what they had done. He died in 1977. Soon after George Steinbrenner heard about Uncle Billy and that had been a Yankee fan. He had the Yankee office called every survivor and brought them all to New York. President Carter recognized the unit’s “extraordinary heroism” and had the U.S. Army approve combat medals for all eighteen men (including the late Uncle Billy). There at Yankee Stadium’s opening game of the season, they stood as the crowds cheered. They were decorated and thus became WWII's most decorated platoon. My Aunt, Billy’s wife, threw out the first ball.

Grace ‘n’ Vessels of Christ Ministries  (Coloratura Soprano, Operatic Range)
 
Yes, Grace is the real deal.  Out of all the ministries I’ve ever worked with, I’ve never seen more healings, or a better quality of healings, than in her ministry.  This is a girl who was abused as a child growing up in the projects of White Plains, NY, and overcame all obstacles.  She had always seen a lot of miracles in her own life, but she never expected God to go public. 
The first time she sang publicly, many people were healed as hundreds began to rush the stage screaming, “Touch me!” “Heal me!”  She was so shocked at what was happening, she backed up into the drums and nearly toppled head over heals.  Immediately, she was branded as a witch and an antichrist, but some of those who were in authority were also healed and defended her.

Grace is the one that the Hollywood movie stars turn to because she never takes advantage of them nor reveals their secrets.  Her motive is to heal them and help them straighten out their own lives, not expose them.  Her files contain thousands of documented testimonies, and over a hundred cases of AIDS have been completely (medically documented) healed!  No wonder she sings with such confidence!  Get on her mailing list.  You won’t believe what you see.  (Oh, by the way, she’s Greek, Italian and Jewish: it makes for a very fiery mix!) 
 
One night, in the middle of New York City, she bolts out of a limousine, runs in full evening gown, from chin to toe, and steps right into the middle of a gang fight!  She commanded them to stop fighting: they did!  She told them they ought to be ashamed of themselves: they were!  She asked them if their mothers knew what they were doing: they all hung their heads!  By the time her bodyguards could actually get out of the car and catch up to her, she had both gangs holding hands in a prayer circle, praying for each other and apologizing to one another!  (Glory to God!)  She has published an incredible collection of over 27 CD’s, and one CD.  Her videos are now, sadly, out of print.
